Ingredients

For the salmon

  • 2 fillets Salmon Rich in omega-3 fatty acids
  • 2 tablespoons Olive oil Aromatic and fruity oil
  • 1 tablespoon Lemon juice Freshly squeezed for a zesty kick
  • Salt and Pepper To taste

For the grain bowl

  • 1 cup Quinoa Rinsed and fluffy
  • 1 cup Cucumbers Diced for fresh crunch
  • 1 cup Cherry tomatoes Halved for sweetness
  • 1/4 cup Red onion Thinly sliced for depth
  • 1 cup Tzatziki sauce Homemade for best flavor
  • 1/4 cup Fresh herbs Dill or mint for fragrant finish

Instructions

Preparation

  • Rinse your quinoa under cold water and drain. In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce the heat to low and cover. Cook for about 15 minutes or until all the water is absorbed. Fluff with a fork and set aside.
  • While the quinoa cooks, prepare a simple marinade by whisking together 2 tablespoons of olive oil, 1 tablespoon of freshly squeezed lemon juice, salt, and pepper. Coat the salmon fillets in the marinade and let them sit for about 15 minutes.

Cooking

  • Preheat your grill or oven to 400°F (200°C). If grilling, place the salmon skin-side down on the grill and cook for about 6-8 minutes per side, depending on thickness. If baking, place the salmon on a lined baking sheet and cook for about 12-15 minutes, or until the salmon flakes easily with a fork.
  • While the salmon is cooking, dice the cucumbers, halve the cherry tomatoes, and thinly slice the red onion.

Assembly

  • In serving bowls, start with a base of quinoa. Top each bowl with flaky salmon, a generous scoop of tzatziki sauce, and a colorful arrangement of cucumbers, tomatoes, and red onion. Sprinkle fresh herbs like dill or mint on top for a fragrant finish.

Serving

  • Serve your Irresistibly Fresh Greek Salmon Grain Bowls immediately for the best flavor and experience.

Notes

Tips: Marinate the salmon for at least 15 minutes to enhance flavor. Rinse quinoa thoroughly to avoid bitterness. Serve with a side of whole-grain pita and Greek salad for a complete meal.
