Preparation

  • Start by cutting the beef chuck roast into bite-sized chunks. Season with salt and pepper.
  • In a large pot over medium-high heat, add a drizzle of oil. Once hot, add the beef chunks and sear until browned on all sides.
  • Stir in the chopped onion and minced garlic, cooking until the onion becomes translucent.
  • Pour in the beef broth, adding the bay leaves, star anise, sliced ginger, and soy sauce. Bring to a gentle simmer.
  • Reduce heat to low, cover the pot, and simmer for 1.5 to 2 hours.
  • After the beef has tenderized, add the sliced carrots and bok choy leaves. Simmer for an additional 10-15 minutes.
  • Cook the egg noodles according to package instructions. Drain and set aside.
  • Stir in the cooked egg noodles once the vegetables are ready and let them soak for a couple of minutes.
  • Serve hot, garnished with freshly chopped green onions.

Notes

Tips: Use fresh egg noodles for better texture. For spice, add sliced jalapeƱo or chili sauce. Store leftovers in an airtight container for up to 3 days.
