Instructions
 

Preparation

  • In a blender, combine the raspberries, coconut milk, sugar, heavy cream, vanilla extract, and salt. Blend until smooth.
  • Pour the mixture into a bowl and refrigerate for 1-2 hours until chilled.

Churning

  • Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until soft-serve consistency.
  • Transfer the ice cream to an airtight container and freeze for at least 4 hours before serving.

Notes

If you don’t have an ice cream maker, use the freeze-and-stir method. Stir the mixture every 30 minutes until it reaches desired consistency. Taste the mixture before churning to adjust sweetness if necessary.
