For the main dish

  • 12 pieces Cocktail Tomatoes Juicy and sweet, exploding with flavor when cooked.

Preparation

  • In a small mixing bowl, combine the honey, minced garlic, and freshly squeezed lemon juice. Mix well until the honey integrates fully.
  • Place the salmon fillet on a baking tray lined with parchment paper. Drizzle olive oil over the salmon and season with salt and black pepper.
  • Pour the honey garlic mixture over the salmon fillet, ensuring an even coat.
  • In a separate bowl, toss the zucchini and cocktail tomatoes with remaining olive oil, salt, and pepper.
  • Arrange the seasoned vegetables around the salmon on the baking tray.

Cooking

  • Preheat your oven to 200°C (400°F) and bake for about 15-20 minutes, until the salmon flakes easily with a fork.
  • Optionally, add lemon slices on top of the salmon in the last few minutes of baking for extra zest.
  • Remove from the oven and let cool slightly before serving.

Notes

For deeper flavor, consider marinating the salmon for at least 30 minutes before baking. You can also grill it for 8-10 minutes if short on time. This dish pairs well with quinoa or jasmine rice.
