  • 14 oz cooked sausage (like chicken & apple or kielbasa), sliced into 1/2-inch rounds Choose your preferred sausage.
  • 2 medium sweet potatoes, peeled and cubed into 1-inch pieces Ensure they are cut into uniform pieces.
  • 1 head broccoli, cut into florets Fresh broccoli works best.

Seasoning and Sauce

  • 2 tbsp olive oil For tossing vegetables.
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/3 cup honey For the glaze.
  • 1/4 cup low-sodium soy sauce Can substitute with coconut aminos for gluten-free.
  • 3 cloves garlic, minced
  • 2 tbsp chicken broth Low-sodium preferred.
  • 1 tsp cornstarch Used for thickening the glaze.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • On a large rimmed baking sheet, toss the sweet potatoes and broccoli with olive oil, salt, pepper, and garlic powder until evenly coated.
  • Arrange the seasoned vegetables in a single layer on the baking sheet and roast for 15 minutes.
  • Add the sliced sausage to the sheet and toss everything together.
  • Return the baking sheet to the oven and roast for another 10-15 minutes until the sweet potatoes are tender and golden brown.

Making the Glaze

  • In a small saucepan, whisk together the honey, soy sauce, and minced garlic over medium heat.
  • In a separate bowl, whisk the chicken broth and cornstarch together to create a slurry. Pour this into the saucepan.
  • Bring the mixture to a simmer, whisking constantly, and cook for 1-2 minutes or until the glaze thickens.

Finishing Touches

  • Once the roasted sausage and vegetables are ready, pour the thickened glaze over them on the baking sheet and toss gently until well coated.
  • Serve immediately and enjoy!

Notes

Cut the sweet potatoes into uniform sizes for even cooking and avoid overcrowding the pan.
