  • 1 lb chicken breast, cut into 1” pieces Juicy chicken pieces
  • 3 tbsp olive oil For marinating the chicken
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tbsp onion powder
  • 0.5 cup honey, rich and golden For sweetness
  • 0.5 cup Texas Pete hot sauce For a kick of heat
  • 0.5 tsp red pepper flakes Adds extra spice

For the Vegetables

  • 1 head broccoli, cut into florets Fresh and crunchy
  • 1.5 cups shredded purple cabbage Adding color and crunch

  • Cooked rice Hearty base

Instructions
 

Preparation

  • In a large mixing bowl, combine the chicken pieces with the olive oil, salt, pepper, garlic powder, paprika, and onion powder. Toss well until all chicken bites are evenly coated with the spices.

Cooking

  • In a large skillet over medium-high heat, add the marinated chicken. Sear the chicken until browned and cooked through, about 6-8 minutes. Stir occasionally to ensure even cooking.
  • Once the chicken is cooked, lower the heat and add the honey, Texas Pete hot sauce, and red pepper flakes to the skillet. Stir gently to combine the chicken with the sauce. Allow it to simmer for 5 minutes, letting the flavors meld together into a sweet and spicy coating.

Blanching the Broccoli

  • While the chicken simmers, bring a small pot of water to a boil. Add the broccoli florets and cook for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

Assembly

  • In serving bowls, place a hearty scoop of cooked rice as your base. Top with the hot honey chicken, blanched broccoli, and a handful of shredded purple cabbage.

Garnishing

Notes
