  • 2 teaspoons red chili powder Adjust to taste for desired heat.
  • 1 cup fried onions Essential for texture and richness.
  • 1 bunch cilantro (chopped) Adds color and flavor.
  • 1 bunch mint leaves (chopped) Lends freshness to the dish.
  • 0.5 cup ghee Brings richness and depth of flavor.

Preparation

  • Begin by placing the cut chicken pieces in a large mixing bowl. Add the yogurt, ginger garlic paste, turmeric powder, red chili powder, and a pinch of salt. Mix well and let marinate for at least 30 minutes.
  • While the chicken is marinating, rinse the soaked basmati rice under cold water until the water runs clear to remove excess starch. Drain and set aside.

Cooking

  • In a heavy-bottomed pot, heat the ghee over medium heat. Add the marinated chicken along with all the marinade, and sauté until the chicken is cooked through and the oil separates, about 10-15 minutes.
  • Add the drained basmati rice on top of the chicken, spreading it evenly without stirring. Sprinkle cilantro, mint leaves, and fried onions over the rice.
  • Pour in 4 cups of water (adjust as needed) to submerge the rice. Bring to a gentle boil, then reduce the heat to low and cover. Cook on low heat for 25-30 minutes using the 'dum' method.
  • After cooking, remove from heat and let rest for 10 minutes without opening the lid. Fluff with a fork before serving, garnishing with extra fried onions and herbs as desired.

Notes

Use high-quality basmati rice for the best texture. Timing of marination and resting is crucial for flavor. Adjust red chili powder to your heat preference.
