  • Begin by rinsing the fresh clams thoroughly under cold water to remove any sand or grit.
  • In a large pot over medium heat, add a splash of vegetable broth and sauté the chopped onion and minced garlic until softened and fragrant, about 3-4 minutes.

Cooking

  • Stir in the diced Yukon Gold potatoes and let them cook with the aromatics for an additional 5 minutes.
  • Pour in the vegetable broth, bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 10 minutes, or until the potatoes are fork-tender.
  • Add the coconut milk to the pot, stirring well to create a creamy base.
  • Gently introduce the fresh shrimp and clams, cover with a lid and cook for 5-7 minutes, allowing the clams to open and the shrimp to turn pink and opaque.

Notes
