Preparation

  • Pat the chicken breasts dry with paper towels.
  • Season both sides generously with salt and freshly ground black pepper.

Cooking

  • In a large skillet, heat extra virgin olive oil over medium-high heat.
  • Place the seasoned chicken breasts in the hot skillet and cook for about 5-6 minutes on each side.
  • Once cooked, transfer the chicken to a plate and cover with foil to keep warm.
  • In the same skillet, reduce the heat to medium and add fresh blueberries, cooking for about 3-4 minutes.
  • Pour in balsamic vinegar and drizzle honey over the blueberries. Simmer for another 2-3 minutes.
  • Stir in fresh thyme leaves and adjust seasoning with additional salt as needed.
  • Return the cooked chicken to the skillet and spoon the blueberry sauce over it. Cook for another minute.

Serving

  • Plate the chicken and generously drizzle with blueberry thyme sauce.

Notes

For a citrusy twist, consider adding a splash of orange juice to the sauce. Marinating the chicken in thyme and lemon juice for 30 minutes before cooking enhances the flavor profile.
