For the Chicken

  • 4 pieces boneless chicken breast or thighs Thighs are juicier
  • 1/2 cup pure maple syrup For the glaze

  • 2 cloves minced garlic
  • 1 tablespoon grated ginger
  • 2 tablespoons olive oil For cooking

For the Coconut Rice

  • 1 cup jasmine rice Fragrant variant preferred
  • 1 can full-fat coconut milk Adds creaminess
  • 1 cup water
  • Pinch of salt For enhancing flavor
  • 1/4 cup chopped cilantro For mixing in
  • 2 stalks sliced green onions For garnishing
  • 2 pieces lime wedges For serving
  • 1/4 cup toasted coconut flakes Optional for crunch

Instructions
 

Coconut Rice Preparation

  • Rinse the jasmine rice under cold running water until the water runs clear.
  • In a medium saucepan, combine the rinsed rice, coconut milk, water, and a pinch of salt. Stir gently.
  • Place the saucepan over medium heat and bring to a gentle boil. Once boiling, reduce heat to low and cover. Cook for about 15-20 minutes until liquid is absorbed.
  • Remove from heat, let sit covered for 5 minutes, then fluff with a fork and fold in cilantro.

Chicken Preparation

  • In a large bowl, combine maple syrup, Sriracha sauce, soy sauce, minced garlic, and ginger. Whisk to blend.
  • Add chicken pieces to the marinade, ensuring they are well-coated. Marinate for at least 15 minutes.
  • In a large skillet, heat olive oil over medium-high heat and add the marinated chicken.
  • Sear chicken for 5-7 minutes per side until fully cooked and a sticky glaze forms. Check that internal temperature is 165°F.
  • Remove chicken from skillet and let rest for a few minutes before slicing.

Serving

  • Serve coconut rice on a platter or in bowls, topped with sliced spicy maple chicken.
  • Drizzle remaining marinade over the chicken and garnish with green onions and cilantro.
  • Serve with lime wedges and optional toasted coconut flakes.

Notes

Adjust Sriracha to your preferred heat level. Marinating longer enhances flavor. You can prepare the rice ahead and reheat before serving.
