Preparation Steps

  • Start by washing the chicken thighs under cold water and patting them dry with paper towels.
  • In a large bowl, combine the chicken thighs with the curry powder, garlic, ginger, and half of the chopped onion. Let it marinate for at least 30 minutes.
  • In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the remaining chopped onion and sauté until it becomes translucent, approximately 3-4 minutes.
  • Add the marinated chicken thighs to the pot, cooking for about 5-7 minutes on each side until they are nicely browned.
  • Pour in the coconut milk, stirring gently to combine.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 30-40 minutes or until the chicken is tender and cooked through.
  • Once cooked, taste and adjust the seasoning if needed. Serve hot, garnished with fresh herbs.

Notes

For additional depth, consider adding diced bell peppers or carrots while simmering. Marinating chicken overnight enhances the flavor. For spiciness, add scotch bonnet peppers or cayenne pepper.
