  • 2 tablespoons Jamaican curry powder A vibrant yellow spice blend.
  • 1 teaspoon salt To enhance the flavors.
  • 1 large onion (chopped) Provides sweetness.
  • 4 cloves garlic (minced) Aromatic and pungent.

Preparation

  • Marinate the goat meat in a large bowl with Jamaican curry powder and salt. Allow it to marinate for at least one hour, ideally overnight in the refrigerator.
  • Heat oil in a large pot or Dutch oven over medium heat. Sauté chopped onions until soft and translucent.
  • Stir in minced garlic and cook for an additional minute, being careful not to burn.
  • Increase heat to medium-high, add the marinated goat meat, and brown on all sides.
  • Reduce heat to low, pour in water to cover the meat, cover the pot, and let it simmer for 1.5 to 2 hours, or until fork-tender.
  • Taste and adjust seasoning if necessary. If a thicker gravy is desired, cook uncovered to reduce.
  • Serve over rice or with warm roti to enjoy the rich gravy.

Notes

For a spicier kick, add chopped Scotch bonnet peppers during the simmering phase. Allow the dish to rest for 10-15 minutes after cooking for enhanced flavors.
