Preparation

  • Begin by gathering and prepping all your ingredients. Slice the Andouille sausage into half-moons, cut the chicken into bite-sized pieces, chop the bell peppers, dice the onion, and mince the garlic.

Cooking

  • In a large pot or Dutch oven over medium heat, add a drizzle of oil and warm it up. Add the sliced Andouille sausage first, cooking until golden brown and slightly crispy.
  • Next, add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove both from the pot and set aside.
  • In the same pot, add the chopped onion, bell peppers, and minced garlic. Sauté until the onions become translucent and the peppers soften, approximately 5 minutes.
  • Return the sausage and chicken to the pot. Stir in the diced tomatoes (with their juice) and the Cajun seasoning, mixing everything well.
  • Pour in the long-grain rice, followed by the chicken broth. Stir to combine all ingredients and ensure the rice is submerged in the liquid. Add salt and pepper to taste.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes or until the rice is tender and has absorbed the liquid.
  • Once the rice is cooked, remove the pot from heat. Let it sit covered for an additional 5 minutes before fluffing with a fork.
  • Mix in the chopped green onions and parsley just before serving for a fresh touch.

Notes

Feel free to swap out the proteins or include shrimp for a seafood twist! Add other vegetables for more nutrition.
