For the Marinade/Sauce

  • 1/4 cup Brown sugar Adds a sweet caramelization that balances the soy sauce perfectly.
  • 2 tbsp Rice vinegar A tangy note that enhances the sauce's complexity.
  • 1 tbsp Sesame oil Rich and nutty, sesame oil adds depth to the marinade.
  • 2 tbsp Green onions (sliced) Brings a burst of color and flavor.
  • 1 tbsp Sesame seeds Toasted, these seeds add a delightful crunch.

Preparation

  • In a large bowl, combine the low-sodium soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger. Stir well until the sugar is dissolved and the ingredients are fully blended.
  • Place the boneless, skinless chicken breasts in the marinade, ensuring they're fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.

Cooking

  • Heat a non-stick skillet over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Cook the chicken for 5-7 minutes on each side, until cooked through.
  • Pour the reserved marinade into the skillet, scraping up any browned bits. Bring it to a boil, then reduce to a simmer and cook for 3-4 minutes until it thickens slightly.
  • Return the chicken to the skillet, coating it with the thickened sauce. Cook for an additional 2-3 minutes.
  • Remove from heat, slice the chicken and serve it over rice or noodles garnished with sliced green onions and toasted sesame seeds.

Notes

For an extra layer of flavor, consider marinating the chicken overnight. If you prefer a spicier kick, add red pepper flakes or sriracha to the marinade. You can also use chicken thighs for a juicier option.
