Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced yellow onion and sauté until it becomes translucent, about 5 minutes.
  • Stir in the minced garlic and cook for an additional minute.
  • Toss in the ground beef and cook until browned, breaking it apart with a spoon for about 7-10 minutes. Drain any excess fat.
  • Sprinkle in Italian seasoning, ground pepper, and kosher salt, and mix.
  • Pour in the marinara sauce and beef broth, stirring to combine.
  • Add the crushed tomatoes and stir.
  • Bring to a gentle boil and stir in the Mafalda noodles, cooking according to package directions.
  • Once noodles are al dente, reduce heat and stir in the heavy cream.
  • Fold in the mozzarella and cheddar-Monterey Jack cheese blend until melted.
  • Serve hot, garnished with fresh parsley.

Notes

For a richer flavor, let the soup simmer longer after adding tomatoes and broth. Customize your cheese blend and add vegetables if desired.
