  • Shredded rotisserie chicken or sautéed shrimp (optional) For added protein and heartiness.

  • In a medium-sized saucepan, bring 2 cups of chicken broth to a swift boil.
  • Once the broth reaches a boil, add 1 cup of orzo and reduce the heat. Simmer uncovered for 8–10 minutes until tender, stirring occasionally.
  • After the orzo has cooked, stir in 1 tablespoon of butter, 2 cloves of minced garlic, and the zest of 1 lemon. Cook for an additional 1–2 minutes until fragrant.
  • Fold in ½ cup of grated Parmesan cheese until it melts and combines with the orzo.
  • If using, toss in 1 cup of spinach or peas and cook until just wilted or heated through.
  • For added heartiness, fold in shredded rotisserie chicken or sautéed shrimp right before serving.

Notes

For best results, stir the orzo occasionally during cooking to prevent sticking. Adjust lemon zest for desired citrus flavor. Can use whole grain orzo for a healthier variation.
