Ingredients
  

Tofu and Aromatics

  • 14 oz Extra-firm tofu Press the tofu before cooking.
  • 1 tbsp Freshly grated ginger
  • 2 cloves Minced garlic

Preparation

  • Begin by pressing the extra-firm tofu for about 15 minutes to remove excess water. Wrap the tofu in paper towels or a clean kitchen cloth, and place a heavy object on top. Once pressed, cut the tofu into bite-sized cubes.
  • Cook the brown rice noodles according to package instructions. Alternatively, prepare regular rice as your base for this dish. Drain and set aside.

Cooking

  • In a large skillet, heat the canola or coconut oil over medium-high heat. Add the tofu cubes to the skillet, cooking for about 5-7 minutes until golden brown and crispy on all sides. Remove the tofu from the skillet and set aside.
  • In the same skillet, add the freshly grated ginger, minced garlic, and lemongrass paste. Sauté for about 1-2 minutes until fragrant, stirring continuously to avoid burning.
  • Pour in the lite canned coconut milk and stir in the honey (or maple syrup) and fish sauce (or soy sauce). Bring the mixture to a gentle simmer for about 3 minutes.
  • Add the quartered baby bok choy to the skillet, stirring to combine. Cook for an additional 2-3 minutes until the bok choy is tender yet still vibrant in color.
  • Return the crispy tofu to the skillet and mix well with the coconut and bok choy mixture. Add lime juice, crushed red pepper flakes, and kosher salt according to taste.

Assembly

  • To serve, place a generous portion of the noodles or rice in each bowl. Top with the lemongrass coconut tofu and bok choy mixture, garnishing with fresh cilantro leaves.
