Preparation

  • Heat a large pot over medium heat and add a splash of oil. Sauté the diced onion for 5-7 minutes until translucent.
  • Add the minced garlic and grated ginger to the pot and cook for 1-2 minutes until fragrant.
  • Stir in the curry powder, ground cumin, and turmeric. Cook for about 1 minute.
  • Incorporate the rinsed red lentils and pumpkin puree, followed by the coconut milk. Mix well.
  • Bring the mixture to a simmer, reduce heat to low, cover, and let cook for approximately 25 minutes, stirring occasionally.
  • Add the chopped spinach and stir until wilted. Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro.

Notes

To enhance flavors, consider toasting spices before adding onion. For heat, add chopped chili pepper or red pepper flakes. Customize with your favorite vegetables.
