  • 2 Green onions Chopped to sprinkle on top.
  • 1 cup Bell peppers Diced, adding sweetness and color.

Preparation

  • Boil a large pot of salted water and cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
  • In a large skillet over medium heat, melt the unsalted butter. Add the minced garlic and sauté for about 1 minute until fragrant, but not browned.
  • Add the diced bell peppers to the skillet, cooking for 3-4 minutes until softened.
  • Pour in the heavy cream, stirring gently until heated and nearly simmering.
  • Mix in the Cajun seasoning and combine well.
  • Stir in the freshly grated Parmesan cheese until melted and integrated into the sauce.
  • Fold in the cooked tortellini and diced cooked chicken, mixing well to coat evenly.
  • Remove from heat and garnish with chopped green onions before serving.

Notes

Great with mozzarella or cheddar for extra cheese. Adjust spice with crushed red pepper flakes. For a vegetarian option, omit chicken or use grilled shrimp or sautéed mushrooms. Refrigerate leftovers and consume within 3-4 days or freeze for up to 2 months.
