  • 4 fillets 4 salmon fillets (6 oz each) skin-on or skinless
  • 1 tbsp 1 tbsp olive oil aromatic and heart-healthy
  • 1/2 tsp 1/2 tsp salt to taste
  • 1/4 tsp 1/4 tsp black pepper freshly ground
  • 3 cloves 3 cloves garlic minced
  • 1/2 cup 1/2 cup sun-dried tomatoes in oil drained and chopped
  • 1 cup 1 cup heavy cream creates a velvety sauce
  • 1/4 cup 1/4 cup chicken broth low sodium
  • 1/2 cup 1/2 cup Parmesan cheese freshly grated
  • 1/4 cup 1/4 cup fresh basil chopped
  • 1/4 tsp 1/4 tsp red pepper flakes optional, for spice

Instructions
 

Preparation

  • Pat the salmon fillets completely dry with a paper towel. Season both sides generously with salt and black pepper.
  • Heat olive oil in a large skillet over medium-high heat, carefully place the salmon fillets, skin-side up, in the hot pan.
  • Sear for 4-6 minutes, until golden and crispy. Flip the fillets and cook for another 3-4 minutes on the other side, or until cooked to your desired doneness. Remove the salmon from the skillet and set aside.

Sauce Preparation

  • In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the chopped sun-dried tomatoes and red pepper flakes, cooking for another minute until the tomatoes begin to soften.
  • Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom.
  • Stir in the heavy cream and bring to a gentle simmer.
  • Reduce the heat to low and stir in the grated Parmesan cheese until melted.
  • Stir in the fresh basil. Return the seared salmon fillets to the skillet, spooning some of the sauce over the top. Let it simmer for a minute before serving.

Notes

For best results, use fresh ingredients and avoid overcrowding the pan to achieve a perfect sear. This recipe can be adapted for different herbs or for a lighter version using Greek yogurt or cashew cream.
