  • 1 cup panko (Japanese bread crumbs) Ensures a light and crispy texture.
  • 1 teaspoon kosher salt Enhances flavor without overpowering.
  • 1 spray cooking spray To achieve a golden, crispy finish.

For the Fish

  • 2 fillets skinless, boneless firm white fish (halibut or cod recommended) Serves as the perfect canvas for the crust.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or lightly grease with cooking spray.
  • In a bowl, combine finely crushed pistachios, matcha powder, panko, lemon zest, honey, and a pinch of kosher salt. Stir until well blended.
  • Pat the fish fillets dry with paper towels and lightly season with salt.
  • Brush a thin layer of olive oil over each fillet. Press the pistachio-matcha mixture onto the top of each fillet.

Baking

  • Place coated fillets on the baking sheet crust side up. Spray the tops lightly with cooking spray.
  • Bake for about 15-20 minutes until the fish is opaque and flakes easily with a fork.

Serving

  • Allow the fish to rest for a few minutes after baking. Serve with a wedge of lemon.

Notes

For added flavor, consider adding garlic powder or fresh herbs into the coating. You can also use different nuts or white fish types for variations.
