Preparation

  • Preheat your oven to 450°F (232°C).
  • Pat the beef dry with paper towels.
  • In a small bowl, combine the minced garlic, kosher salt, rosemary, and olive oil to form a paste.
  • Rub this mixture all over the beef, covering it well. Let it sit at room temperature for 30 minutes.

Cooking

  • Place the roast fat side up in a roasting pan. Roast for 15 minutes.
  • After 15 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches 130°F (54°C), about 1 to 1.5 hours.
  • Once done, remove the roast from the oven and cover it with aluminum foil. Let it rest for at least 15 minutes.
  • Slice the beef against the grain and serve.

Notes

For best results, use a meat thermometer to ensure the roast is cooked perfectly. Allow the beef to rest for juicier slices. You can experiment with different herbs if desired.
