Preparation

  • Start by prepping the eggplant. Cut the large eggplant into half, and then score the insides with a knife in a criss-cross pattern.
  • Grill the eggplant or roast it in the oven at 400°F (200°C) for about 30-40 minutes until tender and slightly charred.
  • Meanwhile, dice the large tomatoes into small pieces.
  • In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté until fragrant, about 1-2 minutes.
  • Add the diced tomatoes to the skillet, along with the paprika, cumin, chili powder (if using), salt, and black pepper. Stir well and cook for about 10 minutes.
  • Once the eggplant is grilled and cool enough to handle, scoop the flesh out and add it to the skillet with the tomato mixture. Mix everything until well combined.
  • Incorporate the chopped fresh cilantro and lemon juice, adjusting seasoning if necessary.
  • Reduce heat to low and let the mixture simmer for another 10 minutes.
  • Transfer the Zaalouk to a serving dish and allow it to cool slightly.

Notes

To elevate your Moroccan Zaalouk, consider grilling the vegetables over charcoal for an authentic smoky flavor. If you enjoy a creamier texture, you can blend the mixture in a food processor before serving. Feel free to adjust the spices according to your taste.
