  • 1 tsp lemon zest Adds refreshing brightness.

  • 0.5 cup heavy cream Contributes creamy consistency.
  • 5 large eggs, room temperature Essential for achieving a light texture.
  • 2 large egg yolks, room temperature Adds richness to the filling.

Instructions
 

For the crust

  • Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a large bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand.
  • Press the crumb mixture into the bottom and slightly up the sides of the springform pan.
  • Bake the crust for 8-10 minutes, or until golden brown. Remove and let cool.

For the cheesecake filling

  • In a large mixing bowl, beat the cream cheese on medium speed until smooth (2-3 minutes).
  • Gradually add sugar and flour, mixing until there are no lumps.
  • Add the lemon zest, vanilla extract, and heavy cream; blend until combined.
  • Beat in the eggs and yolks one at a time, mixing on low speed and avoiding overmixing.
  • Pour the cheesecake batter onto the cooled crust and smooth the top.
  • Bake for about 60-70 minutes, until the edges are set but the center is slightly jiggly.
  • Turn off the oven and crack the door, letting the cheesecake cool gradually before refrigerating for at least 4 hours or overnight.

Notes

Use room temperature ingredients for a smoother filling. Consider using a water bath for a creamier texture and fewer cracks.
