Preparation

  • In a mixing bowl, combine the gingerbread cookie crumbs and melted unsalted butter. Stir until the crumbs are evenly moistened.
  • Place 2 tablespoons of the gingerbread crumb mixture at the bottom of small glasses or cupcake liners. Use the back of a spoon to press down firmly.
  • In a separate bowl, beat the softened cream cheese with an electric mixer until creamy and smooth.
  • Gradually add in the powdered sugar while mixing, ensuring it is well incorporated. Mix in the ground ginger, ground cinnamon, and vanilla extract until fully blended.
  • Gently fold in the whipped cream until everything combines into a luscious, airy cheesecake filling.
  • Spoon the cheesecake filling on top of the gingerbread crust in each cup, smoothing it out evenly.
  • Cover the cups with plastic wrap and place them in the fridge to chill for at least 4 hours.
