Preparation

  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent and fragrant, around 3-4 minutes.
  • Add the lean ground beef to the skillet. Season with salt, pepper, and 1 teaspoon of Italian seasoning. Cook until the beef is browned and cooked through, approximately 5-7 minutes.
  • Pour in the 2 cups of marinara sauce, stirring to combine well with the beef mixture. Bring it to a simmer.
  • Carefully layer the 9 oz of no-cook lasagna noodles on top of the beef and sauce, breaking them as needed to fit. Cover the noodles with the remaining sauce, simmering for about 10 minutes until the noodles are tender.
  • Once the noodles are soft, dollop the ricotta cheese over the top, followed by the fresh spinach. Finally, sprinkle the 2 cups of shredded mozzarella cheese over everything.
  • Cover the skillet with a lid and let it cook for an additional 5-7 minutes on low heat, until the cheese is melted and bubbly.
  • Remove from heat and let it cool for a few minutes before serving. Garnish with fresh herbs if desired.

Notes

For added flavor, sauté some mushrooms with the onion and garlic. You can substitute ground beef with ground turkey or a plant-based protein for a vegetarian option. Consider lining your skillet with parchment paper for easier clean-up.
