Ingredients

Cookie Batter

  • 1 cup creamy Peanut Butter the heart of this recipe, providing a smooth, rich base.
  • 0.5 cup softened Butter adds a tender texture and luscious flavor.
  • 0.5 cup granulated Sugar for a touch of sweetness that perfectly balances the flavors.
  • 0.5 cup packed Brown Sugar deepens the flavor with its molasses-rich notes.
  • 1 tsp Vanilla Extract for a warm, aromatic touch that rounds out the sweetness.
  • 1 large Egg helps bind the ingredients together and contributes to the chewy texture.
  • 1.25 cups All-Purpose Flour the backbone of the cookie structure, creating that ideal crumb.
  • 0.75 tsp Baking Soda acts as a leavening agent for those fluffy cookie edges.
  • 0.5 tsp Salt enhances all the flavors while highlighting the sweetness.

Caramel Filling

  • 0.5 cup unwrapped Caramels providing rich, gooey pockets of flavor throughout the cookies.
  • 2 tbsp Heavy Cream ensures the caramel sauce is smooth and creamy.
  • 0.25 tsp Sea Salt a finishing touch that elevates the salted caramel experience.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until combined.
  • In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing on low just until combined.
  • In a small saucepan, combine unwrapped caramels with heavy cream over low heat, stirring until melted into a smooth sauce.
  • Scoop dough onto prepared baking sheets, spacing cookies 2 inches apart. Create a well in the center and add warm caramel sauce.

Baking

  • Bake the cookies for 10-12 minutes or until the edges are golden brown.
  • Immediately sprinkle a pinch of sea salt over each warm cookie and let cool for a few minutes before transferring to a wire rack.

Serving

  • Enjoy the warm cookies with gooey caramel centers. These are great with a glass of cold milk or ice cream.

Notes

To avoid tough cookies, do not over-mix the dough. Allowing the dough to rest for 30 minutes helps flavors meld and improves the texture.
