Preparation

  • Rinse the chicken pieces under cold water. Pat them dry and season generously with salt and pepper. Let marinate while preparing the plantains.
  • Peel and slice the plantains diagonally into half-inch thick pieces.

Frying

  • Heat the vegetable oil in a large frying pan over medium-high heat.
  • Fry the marinated chicken in batches for about 8-10 minutes on each side until cooked through and golden brown.
  • Remove the chicken with a slotted spoon and place on a paper towel-lined plate to absorb excess oil.
  • In the same oil, fry the sliced plantains for 3-5 minutes until golden and crisp.
  • Remove the plantains with a slotted spoon and place on a plate lined with paper towels.

Serving

  • Arrange the crispy chicken on a serving platter alongside the fried plantains. Garnish with fresh cilantro or a squeeze of lime.

Notes

For enhanced flavor, consider marinating the chicken a few hours or overnight. For a healthier version, you can bake the chicken instead of frying. Experiment with spices like cumin or chili powder for added flavor.
