  • 2 lbs chicken breast Boneless and skinless.

Preparation

  • In a large bowl, combine the orange juice, olive oil, smoked paprika, salt, and black pepper. Whisk together until well blended.
  • Add the chicken breasts to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.
  • Preheat your grill or skillet over medium-high heat.

Cooking

  • Remove the chicken from the marinade, letting any excess drip off. Place the chicken on the grill or skillet.
  • Cook for about 6-7 minutes on each side, or until the chicken is fully cooked and has a golden-brown crust.
  • Use a meat thermometer to check that the internal temperature reaches 165°F (75°C).
  • Once cooked, remove the chicken from heat and let it rest for a few minutes before slicing.

Serving

  • Arrange sliced Pollo Loco on a platter. Drizzle with leftover marinade or serve with a dipping sauce.

Notes

For best results, use freshly squeezed orange juice and consider marinating for several hours or overnight. Add garlic or fresh herbs to the marinade for an extra flavor boost.
