  • 1 cup uncooked rice (jasmine or long-grain rice preferred)
  • 2 cups water (for cooking rice)
  • 15 oz canned red beans (drained and rinsed)
  • 1 tablespoon olive oil
  • 1 teaspoon salt (or to taste)
  • 1 teaspoon ground black pepper

Preparation

  • In a medium saucepan, bring 2 cups of water to a boil.
  • Add the uncooked rice and a pinch of salt, then reduce the heat to low. Cover the pot and let it simmer for about 15-20 minutes, or until the rice is tender and fluffy.
  • In a medium-sized skillet, heat the olive oil over medium heat.
  • Add the drained and rinsed red beans to the skillet. Stir gently to combine with the oil.
  • Sprinkle in the salt and ground black pepper. Stir well, allowing the spices to coat the beans evenly.
  • Let the red beans simmer in the skillet for about 5-7 minutes, stirring occasionally.
  • Once both rice and beans are ready, serve them together in bowls with the seasoned red beans over the rice.

Notes

For enhanced flavor, consider adding a bay leaf while simmering the beans. Diced onions and bell peppers can also be added when heating the olive oil. Feel free to experiment with spices such as paprika or thyme.
