Preparation

  • Clear your countertop and gather all ingredients and necessary utensils.
  • In a large mixing bowl, place the cooled, unsalted mashed potatoes.
  • Gradually add powdered sugar, about one cup at a time, mixing until a dough-like consistency is reached.
  • Add vanilla extract and stir until evenly mixed.
  • Fold in the peanut butter, mixing until smooth and blended.
  • On a clean surface or wax paper, roll out the mixture into a ΒΌ inch thick rectangle.
  • Cut the rectangle into smaller squares or rectangles; using powdered sugar to combat stickiness if needed.
  • Roll each piece into little logs and place them on a tray to set, possibly refrigerating for 30 minutes.

Notes
