For the Marinade

  • 2 limes 2 limes (juiced) Freshly squeezed lime juice for brightness.

  • 1.5 teaspoons 1.5 teaspoons ground black pepper Adds a sharp bite.
  • 0.5 teaspoon 0.5 teaspoons ground cloves For a warm, sweet spice.

For Cooking

  • 4 pounds 4 pounds beef chuck roast Ideal for tenderness when slow-cooked.
  • 1 cup 1 cup chicken broth Keeps the beef moist during cooking.
  • 3 pieces 3 bay leaves Infuses herbal aroma.

Instructions
 

Preparation

  • Begin with a large bowl. Combine the lime juice, apple cider vinegar, chipotle peppers, minced garlic, cumin, oregano, salt, black pepper, and ground cloves to create the marinade.
  • Place the beef chuck roast in a resealable plastic bag or shallow dish. Pour the marinade over the roast, ensuring it’s well coated. Seal or cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

Cooking

  • After marinating, remove the roast and sear it in a hot skillet with oil for about 4-5 minutes on all sides until browned.
  • Transfer the beef to a slow cooker, adding chicken broth and bay leaves. Cover and cook on low for 8 hours or until fork-tender.
  • Once cooked, remove the roast and shred it with two forks. Return the shredded beef to the slow cooker and mix it with the juices.

Serving

  • Serve pulled beef in tacos, on sandwiches, or over rice, and pair with your favorite sides.

Notes

Consider adding diced onions or bell peppers to the slow cooker for added flavor. Adjust spice level with more chipotle peppers or hot sauce if desired. Can also be cooked in a Dutch oven with similar methods.
