For the Cream Cheese Layer

  • 8 ounces cream cheese, at room temperature Provides a luscious cheesecake layer.
  • 0.25 cup superfine sugar Dissolves easily for a smooth texture.
  • 0.75 cup milk (preferably whole) Creates a richer texture.
  • 0.5 teaspoon vanilla extract Adds warmth and depth to the dish.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the crushed gingerbread cookies with melted unsalted butter. Mix until the crumbs are thoroughly coated and have a sandy texture.
  • Press this mixture firmly into the bottom of a greased 9x13 inch baking dish to form an even layer. Bake for about 10 minutes, then remove and set aside to cool.

Make the Pumpkin Filling

  • In a large mixing bowl, combine the pumpkin puree, evaporated milk, eggs, granulated sugar, salt, cinnamon, and allspice. Whisk together until smooth and well combined.

Create the Cream Cheese Layer

  • In another bowl, beat the room-temperature cream cheese until smooth and creamy.
  • Gradually add the superfine sugar, continuing to beat until fully blended.
  • Pour in the milk and vanilla extract, mixing until velvety and free of lumps.

Layering the Mixtures

  • Pour the pumpkin filling over the cooled gingerbread crust, spreading it evenly with a spatula.
  • Dollop the cream cheese mixture over the pumpkin layer, and use a knife or toothpick to swirl the two mixtures together gently.

Bake the Bars

  • Place the baking dish back in the oven and bake for 40–45 minutes, or until the center is set and a toothpick inserted comes out clean.

Cool and Serve

  • Once baked, let the bars cool at room temperature before chilling in the refrigerator for at least 2 hours.
  • Once chilled, cut into squares, serve, and enjoy!

Notes

For enhanced flavor, use freshly grated nutmeg. Consider mixing in walnuts or pecans for crunch. Ensure cream cheese is at room temperature to avoid lumps.
