  • 1 lb Ground beef (Lean) Tender and juicy, serves as a hearty base.
  • 1 package Taco seasoning Adds a burst of flavor.
  • 8 oz Cream cheese (Softened) Adds a luscious texture.
  • 1 can Diced tomatoes and green chilies (Drained) Brings a refreshing kick.
  • 1 cup Shredded cheddar cheese Melts into gooey perfection.
  • 1 package Flour tortillas Soft and pliable to wrap the filling.

Instructions
 

Preparation

  • Start by browning the lean ground beef in a large skillet over medium heat, until no longer pink.
  • Drain any excess fat from the skillet.
  • Sprinkle taco seasoning over cooked beef and stir for a minute.
  • Reduce heat to low and add softened cream cheese, stirring until melted and mixed.
  • Fold in drained diced tomatoes and green chilies, stirring to combine.

Assembly

  • Lay out a flour tortilla and spoon a generous amount of the beef and cream cheese mixture along the center.
  • Sprinkle cheddar cheese on top of the filling.
  • Fold sides of the tortilla over the filling and roll from the bottom to the top.
  • Repeat with remaining tortillas and filling.

Cooking

  • In the same skillet, add oil and heat over medium-high.
  • Place each rolled Quesados seam-side down and cook until golden brown and crispy.
  • Remove from skillet and let them rest on paper towels to absorb excess oil.

Notes

For extra flavor, add chopped green onions or cilantro. A vegetarian option can be made with black beans instead of beef. Pair with sauces like salsa, guacamole, or sour cream.
