Preparation

  • Rinse the fresh raspberries under cold water and allow them to drain well. Reserve a few for garnish.
  • In a mixing bowl, add the raspberries and gently mash them with a fork to create a chunky puree with some whole berries mixed in.
  • In a separate bowl, pour in the well-chilled heavy cream and beat on medium speed until soft peaks form (about 2-3 minutes).
  • Gradually add the sifted powdered sugar and vanilla extract to the whipped cream, continuing to beat until firm peaks form.
  • Fold the raspberry puree gently into the whipped cream using a spatula to maintain the airy texture.
  • Spoon the mousse into individual serving bowls or glasses.
  • Refrigerate for at least 30 minutes to an hour to let it set properly.
  • Before serving, garnish with the reserved fresh raspberries.

Notes

Serve at a summer barbecue or holiday gathering. Pairs well with whipped cream or chocolate shavings. Ensure heavy cream is ice-cold for better whipping.
