Preparation

  • Rinse the Granny Smith apples under cold water, then chop them into bite-sized pieces with the skin on.
  • Wash and dice the celery stalks.
  • Toast the walnuts in a dry skillet over medium heat for about 4-5 minutes, stirring often until golden and fragrant.
  • In a large mixing bowl, combine the diced apples, chopped celery, toasted walnuts, and dried cranberries, and gently toss together.

Dress and Serve

  • In a smaller bowl, whisk together the mayonnaise and lemon juice until smooth.
  • Pour the dressing over the salad mixture and toss gently until every piece is coated.
  • Cover and chill in the refrigerator for at least 30 minutes before serving.
  • Serve chilled for the best flavor.

Notes
