For the Dressing

Preparation and Roasting

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the cauliflower florets with 3 tablespoons of extra virgin olive oil. Season generously with salt and pepper.
  • Spread the cauliflower evenly on a baking sheet in a single layer and roast for about 25-30 minutes, or until golden brown and tender, stirring halfway through.
  • While the cauliflower is roasting, prepare the other ingredients in a large mixing bowl: Kalamata olives, Castelvetrano olives, sun-dried tomatoes, capers, and chopped parsley.
  • In a small bowl, whisk together 1/4 cup olive oil, fresh lemon juice, minced garlic, and Dijon mustard. Adjust with salt and pepper to taste.
  • Once the cauliflower is finished roasting, cool slightly before adding it to the bowl with the other ingredients. Pour the dressing over the mixture and toss gently.
  • Sprinkle in the toasted sunflower seeds for that extra crunch and flavor.
  • Serve warm or at room temperature.
