  • 1 lb lean ground beef (90/10 recommended) Offers the ideal balance of tenderness and seasoning.
  • 1 can (10 oz) Rotel tomatoes with green chilies (include liquid) Adds a vibrant burst of flavor and hint of spiciness.
  • 1 block (16 oz) Velveeta cheese (cubed) Melts beautifully for a smooth texture.
  • 1 tsp garlic powder (optional) Enhances the flavor profile with aromatic notes.
  • 1 splash milk To loosen dip if needed.
  • 2 tbsp chopped cilantro or green onions (for garnish) Adds a lovely finishing touch.

  • In a large skillet over medium-high heat, brown the ground beef until fully cooked, about 6–8 minutes. Drain any excess fat.
  • Reduce the heat to low and add the Rotel tomatoes (with liquid) and cubed Velveeta cheese. Stir occasionally as the cheese melts.
  • Continue stirring until the cheese is fully melted and the dip is smooth and creamy, about 5–7 minutes. Add optional garlic powder or a splash of milk if desired.
  • Transfer to a slow cooker on warm or serve immediately with chips, fresh veggies, or as a topping for tacos. Garnish with chopped cilantro or green onions.

Notes

For extra spice, use spicy Rotel tomatoes or add extra diced jalapeños. Store leftovers in an airtight container in the fridge for up to 3 days. Can also be frozen and reheated.
