Ingredients
  

For the crust

  • 1 cup vanilla wafer cookies (broken in half) Crunchy and buttery for the crust.

For the filling

  • 24 oz cream cheese Provides a perfect base.
  • 0.5 cup powdered sugar Sweetens the filling.
  • 0.25 cup light brown sugar Adds caramel flavor.
  • 1 tsp vanilla extract Amplifies sweetness.
  • 0.5 tsp coconut extract Gives a refreshing coconut essence.
  • 1 cup caramel sauce Drizzled throughout and on top.
  • 0.75 cup toasted sweetened coconut flakes Adds texture and flavor.

For the whipped cream

  • 1.25 cups heavy whipping cream Essential for whipped cream topping.
  • 0.5 cup powdered sugar (for whipped cream) Sweetens the whipped cream.

For the ganache

  • 3 oz semi-sweet chocolate chips For the ganache topping.
  • 0.25 cup heavy whipping cream (for ganache) Used to make the ganache smooth.

For garnish

  • 0.25 cup mini chocolate chips For added texture.

Preparation

  • Crush the vanilla wafer cookies until fine crumbs, mix with melted butter and press into a 9-inch springform pan. Bake at 350°F for about 10 minutes and let cool.
  • Beat cream cheese and powdered sugars until smooth, then blend in vanilla and coconut extracts.
  • Stir in caramel sauce and half of the toasted coconut flakes.
  • Whip heavy cream to soft peaks, add powdered sugar, and continue until stiff peaks form. Gently fold into the cream cheese mixture.
  • Pour cheesecake filling over cooled crust, smooth top, cover, and refrigerate for at least 4 hours.
  • Heat 0.25 cup heavy whipping cream, remove from heat, add semi-sweet chocolate chips, and stir until smooth.
  • Drizzle ganache over cheesecake, top with remaining toasted coconut, and mini chocolate chips.
  • Remove cheesecake from springform pan, slice, and serve.

Notes

For a more intense coconut flavor, add extra coconut extract. Adjust powdered sugar to taste for less sweetness. Consider adding chocolate fudge between crust and filling for indulgence.
