Ingredients
  

For the Squash

  • 3 medium acorn squash Choose firm, unblemished examples for the best results.
  • 1 tablespoon olive oil For roasting.
  • 1/4 teaspoon kosher salt To elevate sweetness.

For the Stuffing

  • 1 pound Italian sausage Casings removed; choose a flavorful variety.
  • 2 cloves garlic Minced for aroma.
  • 1 small yellow onion Diced for flavor.
  • 2 stalks celery Diced for crunch.
  • 1/2 tablespoon dried rosemary Pairs well with squash.
  • 1/2 tablespoon dried thyme Enhances savory notes.
  • 1/2 teaspoon kosher salt Balances flavors.
  • 1/4 teaspoon black pepper For warmth.
  • 2 cups spinach Roughly chopped for color and nutrition.
  • 1/2 cup Parmesan Freshly grated; divided.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Cut each acorn squash in half vertically and scoop out the seeds. Drizzle with half a tablespoon of olive oil and sprinkle with 1/4 teaspoon of kosher salt.
  • Place the squash cut-side down on a baking sheet lined with parchment paper and roast for about 30-35 minutes.

Cooking the Stuffing

  • In a large skillet over medium heat, add the remaining half tablespoon of olive oil. Add the diced onion and cook for 3-4 minutes until translucent.
  • Add the minced garlic, diced celery, and Italian sausage. Cook for 5-7 minutes, breaking up the sausage until browned.
  • Stir in the dried rosemary, thyme, kosher salt, and black pepper. Cook for another minute.
  • Add the chopped spinach and stir until wilted, about 2-3 minutes.
  • Remove from heat and mix in 1/4 cup of the freshly grated Parmesan.

Assembling and Baking

  • Once the squash is done roasting, flip each half over and fill with the sausage mixture.
  • Top with the remaining Parmesan and return to the oven. Bake for an additional 10-15 minutes until bubbly and golden.

Notes

For extra flavor, add a dash of red pepper flakes. You can also swap sausage for a vegetarian alternative like lentils or mushrooms. Watch the squash closely while roasting to achieve the perfect tenderness.
