Savory Birria Tacos

Ingredients
  

For the beef filling

  • 2 lbs Chuck roast Rich in connective tissues, ideal for slow cooking.
  • 4 pieces dried Guajillo chilies Adds a smoky depth.
  • 2 pieces dried Ancho chilies Provides natural sweetness.
  • 1 tsp Cumin seeds For earthy and warm flavors.
  • 4 cloves Garlic cloves Enhances savory notes.
  • 1 cup Water For blending the spices.
  • 4 cups Beef broth For the consomé.

For assembling tacos

  • 8 pieces corn tortillas Yields a slightly crispy texture.
  • 1 cup Diced onions For crunchy texture.
  • 1/2 cup Cilantro leaves Adds flavor and color.

Instructions
 

Preparation of Chilies

  • In a small saucepan, bring water to a boil. Add the dried Guajillo and Ancho chilies and allow them to simmer for about 10 minutes until soft.
  • Once cooled, remove the stems and seeds from the chilies.

Blending the Spices

  • In a blender, combine the softened chilies, cumin seeds, garlic cloves, and 1 cup of water. Blend until smooth.

Cooking the Chuck Roast

  • In a large Dutch oven or slow cooker, place the chuck roast and pour in the chili sauce.
  • Add enough beef broth to cover the meat completely and season lightly with salt.
  • Cover and cook on low heat for 6-8 hours until the beef is tender.

Shredding the Meat

  • Once cooked, remove the roast and let it rest for a few minutes. Shred the beef into bite-sized pieces with two forks.

Preparing the Consomé

  • Simmer the remaining broth in the pot and adjust seasoning if necessary.

Frying the Tortillas

  • Heat a non-stick skillet over medium heat. For each tortilla, add a bit of the shredded beef, and fold to form a taco.
  • Cook each side for 2-3 minutes until golden and slightly crispy.

Assembling the Tacos

  • Serve the tacos on a platter topped with diced onions and fresh cilantro. Serve hot with consomé for dipping.

Notes

For extra flavor, marinate the chuck roast in chili sauce overnight. Adjust spice levels by including more dried chiles or cayenne pepper. Leftovers can be used in quesadillas or burritos.
