Preparation Steps

  • Preheat your skillet over medium heat. Season the salmon fillet lightly with salt and pepper. Cook for about 4-5 minutes on each side, until flaky and moist.
  • While the salmon cools, dice the cucumber, halve the cherry tomatoes, and thinly slice the red onion.
  • In a large mixing bowl, toss together the mixed greens.
  • Add the prepared cucumber, cherry tomatoes, and red onion to the bowl of mixed greens. Toss gently to combine.
  • In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, and a pinch of salt and pepper. Adjust seasoning to taste.
  • Flake the cooked salmon over the salad, drizzle the dressing, and toss gently.
  • Plate in bowls or on a large platter and optionally garnish with a lemon wedge or herbs.
