Preparation

  • Begin by dissolving the lime gelatin in boiling water in a mixing bowl. Stir well until the gelatin is completely dissolved.
  • Add in the cold water and mix together to cool down the mixture.
  • In a separate bowl, beat the softened cream cheese until creamy and fluffy for about 2-3 minutes.
  • Gradually add the gelatin mixture to the cream cheese, mixing well until fully incorporated.
  • Fold in the drained crushed pineapple gently.
  • Add the miniature marshmallows and chopped pecans (if using), folding them in gently.
  • Pour the mixture into a serving dish and refrigerate for at least 4 hours, or overnight for best results.

Notes

Allow gelatin to cool sufficiently before adding cream cheese to avoid lumps. Ensure to refrigerate long enough for proper setting. Use an electric mixer for optimal creaminess and texture.
