Creamy Coconut Glaze

  • 0.5 cup full-fat coconut milk (canned) lending a creamy richness
  • 2 tbsp Thai red curry paste providing aromatic spice
  • 1 tbsp honey balancing the heat with a touch of sweetness

Garnishes

  • 0.25 cup fresh cilantro leaves, chopped for freshness and color
  • 2 whole green onions, thinly sliced for a mild oniony crunch
  • 0.5 tsp red chili flakes sprinkling in a bit of heat
  • 1 whole fresh lime, cut into wedges for a zesty finish

Instructions
 

Preparation

  • Cut the chicken breast into 1-inch chunks and season with kosher salt, black pepper, and cornstarch.

Sear the Chicken

  • In a large skillet, heat the cooking oil over medium-high heat.
  • Once the oil is shimmering, add the seasoned chicken pieces in a single layer, ensuring not to overcrowd the pan.
  • Sear the chicken for 5-7 minutes, turning halfway through, until golden brown and cooked through.

Create the Glaze

  • In a mixing bowl, combine the coconut milk, Thai red curry paste, and honey. Stir until fully incorporated.

Combine and Serve

  • Once the chicken is cooked, reduce the heat to low and pour the creamy coconut mixture into the skillet.
  • Stir to coat every piece of chicken in the sauce and simmer for an additional 2-3 minutes.
  • Garnish with cilantro and green onions, and serve with lime wedges.

Notes
