Dressing Ingredients

  • 0.5 cup fresh cilantro (lightly packed) fresh and fragrant, perfect for the dressing

Instructions
 

Preparation

  • In a small bowl or a blender, combine all the dressing ingredients: fresh cilantro, olive oil, lime juice, minced garlic, honey, and a pinch of salt. Whisk or blend until the mixture is smooth and well combined. Set it aside to let the flavors meld.
  • Pat the shrimp dry with a paper towel to remove excess moisture. In a medium bowl, toss the shrimp with the tablespoon of olive oil, chili powder, cumin, salt, and pepper until they are evenly coated.

Cooking

  • Heat a large skillet over medium-high heat. Once hot, add the seasoned shrimp in a single layer. Cook for 1-2 minutes per side until they turn a lovely pink and opaque. Remove them from heat immediately to prevent them from becoming tough.

Assembly

  • In a large mixing bowl, gently combine your cooked shrimp, diced avocados, halved cherry tomatoes, thinly sliced red onion, and sweet corn.
  • Pour the cilantro lime dressing over your shrimp and avocado mixture. Toss gently to coat everything without mashing the avocados.
