Preparation

  • Pat the chicken breasts dry with paper towels.
  • Place chicken breasts at the bottom of the slow cooker.
  • Pour in chicken broth and diced tomatoes, ensuring chicken is submerged.
  • Sprinkle grated Parmesan cheese, Italian seasoning, and minced garlic over the top.
  • Add salt and pepper to taste.

Cooking

  • Cover and set the slow cooker to low for 6-8 hours.
  • After cooking, carefully remove the chicken breasts and shred the meat.
  • Return the shredded chicken back to the slow cooker, stirring into the soup.

Serving

Notes
