Preparation

  • Start by placing your boneless, skinless chicken breasts or thighs into the bottom of your slow cooker.
  • Toss in the diced onion, minced garlic, and jalapeño.
  • Pour in the canned fire-roasted tomatoes and Rotel, letting their vibrant colors and flavors infuse into the mix.
  • Add the 6 cups of chicken stock into the slow cooker.
  • Sprinkle the chili powder, ground cumin, salt, and pepper over the mixture. Stir gently to combine.
  • Cover the slow cooker with its lid and set it to cook on low for 6-8 hours or on high for 4 hours.
  • Once cooking time is up, carefully remove the chicken pieces and shred it using two forks.
  • Pour in the fresh lime juice at this point.
  • Prepare your garnishes and serve hot.

Notes

For best results, lightly brown your chicken before adding it to the slow cooker. Feel free to customize the spice level with jalapeño and Rotel.
