Preparation

  • Rinse the black-eyed peas under cold water.
  • Layer the rinsed black-eyed peas at the bottom of the slow cooker.
  • Add the uncooked rice on top of the black-eyed peas.
  • Pour in the chicken broth, ensuring it covers the peas and rice.
  • Sprinkle the diced tomatoes along with their juice on top.
  • Top with the diced green bell pepper and chopped onion.

Cooking

  • Set the slow cooker on low for 6-8 hours or high for 3-4 hours.
  • Check occasionally to ensure the peas and rice are tender and cooked through.

Notes

Consider adding smoked paprika or hot sauce for extra flavor. Leftover ham or turkey can also enhance the dish. Fresh herbs sprinkled before serving add brightness.
