  • 16 oz udon noodles (or ramen, cooked according to package directions) Hearty base for the dish.
  • 2 tablespoons toasted sesame seeds For garnish.
  • 1/4 cup sliced green onions For garnish.

Instructions
 

Preparation

  • Pat the chuck roast dry with paper towels and season generously with salt and pepper.
  • In a large skillet over medium-high heat, heat the vegetable oil and sear the beef on all sides until a deep brown crust forms, about 3-4 minutes per side.
  • In the basin of your slow cooker, whisk together the low-sodium soy sauce, beef broth, brown sugar, gochujang, toasted sesame oil, minced garlic, and grated ginger.

Cooking

  • Place the seared chuck roast into the slow cooker with the sauce mixture and cover. Cook on low for 7-8 hours or on high for 4-5 hours.
  • Once cooked, transfer the beef to a bowl or cutting board, shred it with two forks, and return the shredded beef to the slow cooker.
  • About 20 minutes before serving, cook the udon noodles according to the package instructions and drain them.
  • Add the cooked noodles to the slow cooker with the beef and sauce, gently tossing to combine.

Serving

  • Serve Korean Beef Noodles immediately, garnished with toasted sesame seeds and sliced green onions.
