Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium-high heat.
  • Season the chuck roast with salt and pepper on all sides, then sear it in the skillet for 4 to 5 minutes on each side until golden-brown.
  • While searing, scrub and chop the carrots and potatoes into large pieces, and slice the onion into wedges.
  • Once the roast is seared, place it into the slow cooker and surround it with the prepared vegetables.
  • Add minced garlic, thyme, and rosemary around the roast.

Cooking

  • Pour the low-sodium beef broth over the roast and vegetables.
  • Cover the slow cooker and set it to low heat for 8 to 10 hours or high heat for 4 to 6 hours.

Final Touches

  • Once cooked, use two forks to shred the meat directly in the slow cooker.
  • Taste and adjust seasoning as necessary, and if preferred, thicken broth with cornstarch and water.

Serving

  • Ladle portions of the pot roast and vegetables onto plates, drizzling with broth before serving.
